Head to the 12th-largest state in Mexico, Baja California, and experience the mouthwatering Tacos de Pulpo a la plancha (Grilled Octopus Tacos) inspired by the famous "El Pulpo Dorado" stand. This stand was run by retired fisherman Don Emilio and quickly grew in popularity because of the quality of his tacos.
Don Emilio fished through the night, and as the sun rose, he fired up the grill and prepared his daily catch. Once, he was experimenting with octopus—marinating it with garlic and dried chillies before grilling. Once the octopus hit the grill, the aromas caught the attention of nearby fishermen as well as the first tourists of the day, and the rest is history.
Much like the original, our version is simple: warm corn tortillas, generous portions of marinated grilled octopus, habanero salsa negra and sliced avocado. Balance the spice of the taco with a California Dreamin'. This concoction of tequila, red berries and lime provides a refreshing reprieve from the habanero salsa negra and captures the essence of endless summer days and breezy coastal nights in Baja California.
