This January we travel to Veracruz, situated on the Gulf of Mexico and celebrated for its stunning beaches and rich indigenous, Spanish and Afro-Caribbean heritage, creating a cultural and flavourful symphony for the senses.
It is also the home of our manager Christian, whose grandmother Doña Inés was the best cook in the house and prided herself on preserving the culinary traditions of Veracruz.
For this month's Sabores de Mexico, we pay tribute to her culinary talents and the love she put into her cooking through our Lengua Entomatadas, slow-cooked beef tongue tacos that traditionally welcome the new year and our Saldaña, a refreshing cocktail made with jalapeño-infused tequila, citrus and sugar cane.
