On the western side of the Yucatan Peninsula lies the state of Campeche, and within that state lies the capital city—also known as Campeche. Back then, there was a very famous street vendor known for serving the most delectable Tacos de Castacán (Crispy Pork Belly Tacos). 

The recipe has existed since colonial times, with each local cook preserving it as it was passed down through generations. Our taqueria stays true to this ancient recipe. Pork belly is confited in lard to let it become tender and flavorful before crisping it up on the plancha. Queso Oaxaca is melted over the crispy pork belly, then topped with avocado, red onion, and cilantro. Salsa verde and habanero salsa balance out the richness, whilst giving it a kick of spice, enhancing the bold flavors.
